Why Double Your Dinner?

Why Chicken and Cheese Taquitos?
If you want a simple meal that goes directly from freezer to table in no time, this is it! Lean shredded chicken is turned into a creamy mixture with a hint of heat, then wrapped tightly in a tortilla and baked until crispy. Very little work for a tasty, family-friendly meal! The chicken can be cooked in the slow cooker OR the Instant pot. Then, get this: The taquitos (once assembled) can be cooked straight from frozen!

Gluten-Free & Dairy-Free Substitutions
For Gluten-Free: Use gluten-free tortillas (not corn tortillas) and buy a gluten-free taco seasoning (or make your own). Make sure your chicken broth is labeled gluten-free, too.
For Dairy-Free: Replace the cream cheese with a good vegan cream cheese (recommend: Kite Hill brand). Either omit the cheddar cheese or use a dairy-free cheese like Daiya brand. We’ve also found that adding in some guacamole when serving helps replace the richness of the cheese.

So yummy, I have made them twice now, going to make a bunch and freeze for when my kids/grandkids are home. I put them in foil and put on the grill on low, then take them out of foil and put them on grill grates for a few minutes until browned and crunchy. So good.
